Ken Hom is a well known Wok cooking legend. His cooking has dazzled TV viewers for many years, and it was with that thought in mind that I bought myself one of his Woks, and indeed his cook wear range matches up to his well known style.
This wok is one of Ken Homs’ traditional style woks. I have seen him using this exact model on his cooking shows. Although I am nowhere near the cook that he is, I can appreciate why this is a good wok. The Carbon Steel distributes the heat from the hob evenly throughout the pan, its flat bottom means that it sits on your hob easily and safely and its 31cm diameter means that there is plenty of room for the biggest of family meals.
The Wok works well on all hob types, I us it on a gas hob, and have used it on a friends ceramic hob and it works well on both although I do prefer cooking over gas especially for Wok cooking.
The Carbon Steel Woks are a more traditional style of wok, you can now get many different types of Woks, non-stick, stainless steel, lid or no lid, but in the end the traditional style wins out in the kitchen. Yes they take a little more looking after, with a carbon steel wok you will need to season the wok after each use, but you know what, that isn’t such a big job, just wipe round it with a little cooking oil on a piece of kitchen towel and apply a little heat, and it will keep well for the next time you use it. The inside of the wok will become a little discoloured, but this is normal and a sign of it being well used!
